One of the most Productive vegetables you can grow.
Each tuber can make an additional 75 to as many as 200 tubers.
The tubers are sometimes used as a substitute for potatoes.
They have a similar consistency, and when raw have a similar texture, but a sweeter, nuttier flavour.
When raw and sliced thinly they can be used for a salad. The carbohydrates give the tubers a tendency to become soft and mushy if boiled, they retain their texture better when steamed.
They store their carbohydrates in a form of inulin, a starch that is not utilized by the body for energy, unlike sugar.
The inulin cannot be broken down by the digestive system which can cause flatulence and in some cases gastric pain.
They are recommended as a potato substitute for diabetics, since they are filling but not absorbed by the body, and because they also show indications of assisting in blood sugar control. Jerusalem artichoke flour is also recommended for those who are allergic to wheat and other grains.
